This is my favorite green casserole dish. I got it on sale at Crate and Barrel, and it's big, heavy, and very yummy. The
green is an ethereal shade of celedon, and the dome lid has such an inviting shape.
In it, I cook simple food -- casseroles and roasted vegetables mostly. Here I'll post some recent, home-grown recipes
that have been cooked in the groovy green dish...
Butternut Squash with Chili and Cider
2 butternut squashes, skinned and cubed
2 cloves garlic, chopped
1 tablespoon chili powder
1 teaspoon crushed hot red chilis
1 teaspoon cumin
1 teaspoon fresh grated ginger
dash of nutmeg
sea salt to taste
lots of ground black pepper
2 tablespoons olive oil
2 tablespoons maple syrup
1/2 cup apple cider
Toss the cubed squash with the spices, then add the oil, syrup and cider. Place in a covered casserole dish (or cover with foil) and bake
in a 375-degree oven until squash is tender.

Brown Rice Casserole with Spinach and Turkey
4 cups cooked brown rice (cooked but al dente)
1 cup turkey breast, cubed (optional)
1 pound fresh spinach, washed and roughly chopped
1 bunch green onions, chooped
2 carrots, chopped
2 cups cheddar cheese, grated
4 cloves garlic, chopped
1 teaspoon oregano
1 teaspoon thyme
lots of ground black pepper
1/4 cup water or chicken stock
Combine all ingredients and put in a covered casserole dish. Bake in a 350-degree oven for 45-minutes to an hour.
